Kidney Bean Burger
This is a recipe for bean burger patties, which are great for making a whole-food, plant-based, no oil, gluten-free, and soy-free, vegan burger.
- 250 g red kidney beans drained and rinsed
- 4 tbsp rolled oats (*gluten-free if needed)
- 2 tbsp sunflower seeds
- 1 tbsp flax seeds
- 1 tbsp tomato paste
- 1 tbsp fresh parsley diced finely
- ½ tsp onion powder
- ½ tsp garlic powder
- salt and pepper to taste
Drain the beans, put them in a bowl and mash them with a potato masher or a fork. Mix in a generous tablespoon of tomato paste and all the spices.
Put the oats, sunflower seeds, and flax seeds into a blender or a food processor. Pulse a few times to ground them into a coarse flour.
Add the flour to the beans and mix well to form a ball. Divide the ball into 4 equal parts and form patties. Bake in a preheated oven set to 180 degrees Celsius or 350 degrees Fahrenheit for 15-20 minutes.
